Homemade Tiramisu Cookies

These are the ultimate cookie treat for coffee and tiramisu lovers! Bring together the great components of tiramisu and combine with a super simple cookie for a gorgeous treat. These are so easy to transport and so much easier to make than regular tiramisu. You just know I love twisting up classic desserts and this has to be one of my favorites of all time!

Ingredients

  • 125 g Unsalted Butter Melted
  • 75 g Light Brown Soft Sugar
  • 125 g Granulated Sugar
  • 1 Large Free Range Egg
  • 2 tsp Vanilla Extract
  • 275 g All Purpose (Plain) Flour
  • 3 tsp Baking Powder

For the Frosting

  • 113 g Unsalted Butter Room Temperature
  • 350 g Powdered Sugar (Icing Sugar)
  • 25 ml Brewed Coffee (left to cool) See Notes for Instant
  • Cocoa Powder to Decorate

Instructions

  • In a large bowl, using an electric/stand mixer (or hand whisk, just double/triple the times) combine the butter and both sugars on medium speed for several minutes, until fully combined. Add the egg and vanilla and mix again.
  • Add the flour and baking powder and mix until combined. The dough should be fairly solid at this stage (it ought to almost form a ball, albeit a very soft one!). Place in fridge to chill for 30 minutes.
  • Preheat the oven to 180℃/375℉. Line two-three large baking sheets.
  • Place cookies 2 inches apart on baking sheets – they spread! Bake 12-14 minutes, until just golden at the edges. Let cool.

For the Frosting

  • Once the cookies are cool, make the frosting. Add the butter to a large mixing bowl. Beat with a whisk on high for a minute to soften/combine everything.
  • Add half the icing sugar, and the coffee and whisk on high. Then add the remaining half and whisk everything on high until fluffy. Add icing sugar/milk as required to meet your desired consistency. Spread over the cooled cookies, and dust with cocoa powder using a sieve!

Notes

For the Brewed Coffee:
If using instant coffee, combine 2 teaspoons of instant coffee in boiling water and let cool down before using.
