Mini Chocolate Chip Cake Bars - 6 cake bars in a mini loaf tin with one that has been pulled apart so you can see the chocolate chip stuffed inside.

Mini Chocolate Chip Cake Bars

Soft, fluffy and easy to make. These are based off my classic muffin recipe, meaning they are made in one bowl with just a wooden spoon! Chocolate chips are definitely better chocolate chunks for these!

Ingredients

  • 170 g Plain Flour
  • 115 g Granulated Sugar
  • 1 tsp Baking Powder
  • 80 ml Milk
  • 35 ml Vegetable Oil
  • 50 g Unsalted Butter Melted
  • 1 Medium Free Range Egg
  • 150 g Milk Chocolate Chips

Instructions

  • Preheat the oven to 200C/180C Fan/Gas 6. Line an 8 hole mini loaf tin.
  • In a large bowl, combine the flour, baking powder and sugar. 
  • Make a well, and pour in the milk, egg, oil and butter (make sure it has cooled a little first). Add the chocolate chips and stir gently with a wooden spoon until just combined. 
  • Scoop the batter into the lined tin. Bake 15-20 minutes, until golden and a skewer inserted comes out clean. Let cool on a wire rack before eating!
