Mint Chocolate Rice Krispie Treats

No bake, no fuss Mint Chocolate Rice Krispie Treats. I use Mint Aero chocolate for the topping and decoration, but use any mint chocolate you like. I also use peppermint extract in the base, but again, feel free to omit/use a mint chocolate instead.

Ingredients

  • 160 g Milk Chocolate
  • 3 tbsp Unsalted Butter
  • 3 tbsp Golden Syrup See above for alternatives
  • 90 g Rice Krispies Cereal
  • 1/2 tsp Peppermint Extract

For the Chocolate Top Layer

  • 90 g Mint Chocolate (I use Mint Aero)
  • 100 g Milk Chocolate
  • Other Mint Chocolate to Decorate Optional

Instructions

  • Line an 8" square pan
  • Combine the butter, golden syrup, chocolate and peppermint extract in a small saucepan. Heat on a very low heat, stirring constantly.
  • Once all melted, turn off the heat. Add in the cereal and stir together. 
  • Press into the pan and chill for 30 minutes.
  • Melt the two chocolates (in small microwavable bowls, checking and stirring at 20 second intervals). Pour over the krispie treats and spread with a spoon to cover.
  • Add any extra decorations as desired before letting chill for at least an hour before slicing and serving.
