Vegan Peanut & Chocolate Cookies

These are super simple to make and will fulfil any vegan's late night cookie cravings! The ingredients are all easy to source, and there's no chill time required, making for a bake that comes together in under 30 minutes!

Ingredients

  • 65 ml Vegetable Oil
  • 135 g Golden Syrup See notes for substitutes
  • 75 g Peanut Butter
  • 50 g Caster Sugar
  • 100 g Light Brown Soft Sugar
  • 200 g Plain Flour
  • 1/2 tsp Baking Soda
  • 20 g Cocoa Powder
  • 60 g Salted Peanuts Roughly Chopped
  • 100 g (Vegan) Dark Chocolate Roughly Chopped

Instructions

  • Preheat oven to 200c/180c Fan/Gas 5. Line 2 large baking trays.
  • In a large bowl, combine the oil, golden syrup and peanut butter until fully combined into a sticky mixture. Stir in both sugars. Fold in the flour, baking soda and cocoa powder until a cookie dough forms.
  • Fold in the chopped chocolate and peanuts. Create 8 small balls of the dough (a large tablespoon of mixture each) and place on the trays, spaced apart. Press down before baking for 12-15 minutes.
  • Remove and let cool on a wire rack!
