Apple Cinnamon Crumble Cake

This Apple Cinnamon Crumble Cake is truly an amateur baker's dream. So easy, and will fill your kitchen with the best Autumnal scent! If you want to eat this warm, omit the glaze and serve up with lots of hot custard instead.

Ingredients

  • 2 Medium Apples (I use Granny Smith - any will do)
  • 120 g Unsalted Butter Melted
  • 60 g Apple Sauce
  • 60 ml Milk
  • 2 Medium Eggs
  • 160 g Granulated Sugar
  • 210 g Plain Flour
  • 2 tsp Baking Powder
  • 1/2 tsp Baking Soda

For the Crumble Topping

  • 15 g Oats
  • 15 g Butter
  • 15 g Plain Flour
  • 50 g Light Brown Sugar
  • 2 tsp Cinnamon

For the Glaze (Optional)

  • 4 tbsp Icing Sugar
  • 2 tbsp Milk

Instructions

  • Preheat the oven to 200C/180C Fan/Gas 6. Lightly grease a 9 inch round cake tin.
  • Peel and dice the two apples to about 1cm dice.
  • In a large bowl, combine the melted butter, apple sauce, milk and eggs with a whisk until thoroughly mixed. Add in the sugar and mix again.
  • Add the flour, baking powder, baking soda and diced apples. Fold this together to form a cake batter. Pour this into the tin.
  • Make the crumble topping by combining all ingredients in a small bowl with a fork. Sprinkle the sand-like mixture over the cake. Bake for approx 35 minutes, until a skewer inserted comes out clean.
  • Let cool on a wire rack before making the glaze. Do this by combining the icing sugar and milk in a small bowl. Drizzle over the cake just before serving!
