Chocolate Orange Ganache Brownies

These are the ultimate treat for anyone that loves the combination of chocolate with orange. The fresh orange zest throughout cuts through the richness of the chocolate ganache layer. The result is a super grown up brownie, perfect as an after dinner treat! I know some people are afraid of ganache, but it's really so easy - my recipe lays out all the steps to keep it as foolproof as possible.

Ingredients

  • 100 g (½ cup) Semi-Sweet/Dark Chocolate Melted
  • 170 g (¾ cup) Unsalted Butter Melted
  • 100 g (½ cup) Light Brown Soft Sugar
  • 100 g (½ cup) Granulated Sugar
  • 2 (2) Large Free Range Eggs
  • 80 g ( cup) All Purpose Flour
  • 30 g (6 tbsp) Cocoa Powder
  • Pinch of Salt
  • 1 tbsp Orange Zest about 1/2 a large orange
  • 1 tbsp Orange Juice

For the Ganache

  • 220 g ( cup) Dark/Semi-Sweet Chocolate
  • 180 ml (6 tbsp) Heavy Cream
  • 2 tbsp (½ cup) Orange Zest about 1 large orange
  • Orange Slices Optional: to decorate

Instructions

  • Pre-heat your oven to 370℉/180℃. Line an 8x8" baking pan.
  • In a small bowl, break up the dark chocolate and melt in the microwave in 20 second intervals, stirring in between to make sure it doesn't burn. Alternatively, set up a double boiler. Do this by placing a heatproof bowl over a small pot of simmering water. Add the chocolate to the heatproof bowl and stir until melted. 
  • In a large mixing bowl, whisk together melted butter and both sugars until fully combined (3-5 minutes). Add in the eggs and vanilla and whisk again.
  • Add the melted chocolate slowly and combine. 
  • Add the flour, salt, orange juice, orange zest and cocoa powder. Fold gently with a rubber spatula or wooden spoon until just combined. Pour the batter into the lined pan.
  • Bake 25 minutes until shiny on top and no longer wobbly.

For the Ganache

  • Chop the chocolate up into small pieces if using bars of chocolate (chocolate chips are fine too). Place the chocolate in a heatproof bowl/jug.
  • Heat the cream over a medium heat in a small saucepan. Once it has started simmering, pour it over the chocolate. Leave for 2 minutes, then whisk to create a thick, glossy chocolate ganache. Whisk in the orange zest. Pour over the baked brownies and spread evenly.
  • Let set at room temperature to ensure a shiny top! Decorate by adding small slices of orange and more orange zest! Slice then serve. Keep refrigerated to store.
