'Cook' your flour in the microwave. Place full amount in a microwave safe bowl and heat for 20 second intervals until hot throughout.
In a large bowl/the bowl of a stand mixer, combine the butter and both sugars on a medium/high speed until fully creamed together. Add the flour and vanilla and combine again.
Divide dough into approx. half. To one half, add the chocolate chips and to the other, the funfetti sprinkles.
Use a tsp to scoop the dough, roll in your hands to form a ball then place on a lined baking tray. Chill for 1 hour in the fridge.
After an hour, melt the milk chocolate in the microwave in 20 second intervals. Use a fork/spoon to dip the choc chip cookie dough balls, cover and place back on the tray. Repeat with the white chocolate for the funfetti version. If not planning on drizzling more chocolate, add decorations now. Chill 1 hour in the fridge.
