Pancake Mix Muffins: Chocolate Chip

If you have ever looked at a box of pancake mix in your pantry and thought it was only good for Sunday morning pancakes, you are in for a surprise. Pancake mix is one of the most underrated shortcuts in baking, and it can do far more than make a stack of flapjacks. One of the easiest and tastiest treats you can make with it is a batch of chocolate chip muffins.

Ingredients

  • 7 oz (200 g) Packet Pancake Mix About 2 Cups
  • 2 (2) Large Eggs
  • ½ Cup (120 ml) Milk
  • ½ Cup (100 g) Granulated Sugar
  • Cup (80 ml) Canola Oil or similar unflavored oil
  • 1 Cup (180 g) Semi Sweet or Milk Chocolate Chips

Instructions

  • Preheat the oven to 350℉/170℃. Line 8 holes of a muffin pan.
  • In a large bowl, whisk together the pancake mix, eggs, milk and oil - until no longer lumpy (whisk by hand to prevent dense muffins).
  • Add the chocolate chips and gently mix in.
  • Scoop the muffin batter into the lined pan, top with more chocolate chips (optional), then bake for 20-23 minutes - until golden on top and a skewer inserted comes out clean! Let cool before serving.
