Preheat the oven to 350℉/170℃. Line 8 holes of a muffin pan.
In a large bowl, whisk together the pancake mix, eggs, milk and oil - until no longer lumpy (whisk by hand to prevent dense muffins).
Add the chocolate chips and gently mix in.
Scoop the muffin batter into the lined pan, top with more chocolate chips (optional), then bake for 20-23 minutes - until golden on top and a skewer inserted comes out clean! Let cool before serving.
