Triple Chocolate Chip Muffins

The best breakfast treat has always got to be chocolate muffins. These involve cocoa powder, milk and dark chocolate for a dreamy (but so easy) chocolate bomb! Start to finish in under 30 minutes, you can whip these up and have warm, melty muffins ready for any occasion! For the best texture, no electric mixers please!

Ingredients

  • 155 g Plain Flour
  • 1 tsp Baking Powder
  • 110 g Granulated Sugar
  • 1 tbsp Cocoa Powder
  • 1 Medium Egg
  • 50 g Butter Melted
  • 30 ml Vegetable Oil
  • 75 ml Milk
  • 100 g Assorted Chocolate Chips or Cut into Chunks

Instructions

  • Preheat the oven to 200C/180C Fan/Gas 6. Line a 6 hole muffin tin.
  • In a large bowl, combine the flour, baking powder, sugar and cocoa powder.
  • Add in the milk, egg, melted butter (ensure it's not still piping hot) and vegetable oil. Stir together with a wooden spoon until just combined.
  • Add in the chocolate chips/chunks. Spoon the batter into the lined muffin tin and bake for 18-20 minutes - until the tops are a dark brown and a skewer inserted comes out clean. Let cool on a wire rack before eating (although so great eaten warm!).
