These Funfetti Cookie Croissants are a colorful take on the viral cookie dough croissant trend. Store bought croissants (because honestly, who has the time to make their own) get stuffed with funfetti cookie dough then baked. It’s up to you whether to make a ‘from scratch’ funfetti cookie recipe or give yourself a head start with a funfetti cake box mix! This is a bake perfect for a brunch with friends, book club, or a fun birthday breakfast!
The funfetti cake mix gets transformed into a cookie dough using my popular recipe: Box Cake Mix Cookies. Then, I add extra sprinkles to make them super bright and fun. Stuff about one to two tablespoons of cookie dough into the sliced open croissants, then an extra tablespoon on top. Bake for about 15 minutes, then let cool and dust with powdered sugar.

Funfetti Cookie Croissants: The Viral Treat Gets a Colorful Upgrade
If you’ve been on social media anytime in the past year, youโve probably seen the viral cookie croissant trend take over TikTok and Instagram. The concept is as dreamy as it sounds โ flaky croissants filled with gooey cookie dough, baked until golden. But today, weโre putting a bright and cheerful spin on the trend by introducing: Funfetti Cookie Croissants.
This version brings a sprinkle-filled, nostalgic twist to the viral treat, combining the buttery crunch of a croissant with the soft, sugary bliss of a funfetti cookie. It’s colorful, playful, and irresistibly delicious.
Whether youโre baking for a party, a special brunch, or just a Saturday afternoon treat, this recipe is simple, eye-catching, and totally viral-worthy.
What Are Funfetti Cookie Croissants?
Imagine this: warm croissant layers, golden brown and flaky, encasing a sweet, slightly crispy funfetti cookie dough center. When baked together, the cookie dough puffs up inside the croissant, creating a magical hybrid of two iconic desserts. The result? A soft-chewy-meets-crispy explosion of textures and flavor, made even better by the rainbow sprinkles peeking through every bite.
This recipe uses refrigerated crescent dough for convenience, but you can use bakery croissants or homemade dough if you’re feeling ambitious.
Optional Toppings
- Drizzle with melted white chocolate
- Dust with powdered sugar
- Add extra sprinkles on top for a festive look

The Viral Cookie Croissant Trend: A Quick History
The cookie croissant didn’t come out of nowhere. Hereโs a quick timeline of how this genius hybrid gained internet fame:
- Early 2023: A few NYC bakeries began stuffing croissants with raw cookie dough, creating buzz among foodies.
- Mid 2023: TikTok creators started sharing homemade versions, sparking a massive trend.
- Late 2023: The cookie croissant made appearances in local cafรฉs across the US and Europe.
- 2024: Variations emerged โ Oreo, brownie, Nutella, and now funfetti, adding creative spins to the classic idea.
- 2025: The Funfetti version gains traction as people look for colorful, celebratory desserts for parties, birthdays, and brunch tables.

Common Mistakes and Easy Fixes
Even though this recipe is fairly simple, there are a few things that can go wrong. Hereโs how to avoid the most common pitfalls:
- Mistake: Cookie dough leaks out during baking
- Fix: Seal the edges of the croissant as tightly as possible and avoid overfilling. A short chilling time helps too.
- Mistake: Croissants get too brown before cookie dough is cooked
- Fix: Lightly tent with foil during the last few minutes of baking if the croissants are browning too quickly.
- Mistake: Dough spreads too much
- Fix: Chill the assembled croissants before baking. Also, use cold butter and donโt over-soften the cookie dough.
- Mistake: Cookie dough remains raw
- Fix: Ensure your croissants arenโt too thick or overcrowded. Bake a few minutes longer and check with a toothpick in the center.
- Mistake: Too dry
- Fix: Donโt overbake. Remove when the croissants are just golden and let them finish setting on the tray.
Troubleshooting Tips
If your first batch doesn’t come out perfect, donโt worry. Here are a few helpful solutions for common issues:
- Issue: My croissants are undercooked inside
- Try lowering the oven temperature slightly and baking longer. This allows the center to cook more evenly.
- Issue: The cookie dough overflows and burns on the tray
- Line the baking sheet with parchment and avoid overstuffing. You can also place a second tray underneath to catch drips.
- Issue: Croissants taste bland
- Double-check your dough and filling seasoning. A pinch of salt in the cookie dough makes a big difference. You can also add a touch of almond extract for extra flavor depth.
- Issue: Croissants feel soggy after cooling
- Let them rest on a wire rack so air circulates and the bottoms donโt steam. Store leftovers loosely covered at room temp โ not in an airtight container.
Tips for Making Them Extra Special
- Use colored or shaped sprinkles for holidays or events (hearts for Valentineโs, stars for Fourth of July, etc.)
- Add a cream cheese glaze for a birthday cake-inspired finish
- Try stuffing mini croissants for bite-sized party treats

INGREDIENTS NEEDED
There are no specialist ingredients or equipment required for this bake. I can find everything I need at my local supermarket or grocery store. I use a large sheet pan, and there is no need for baking parchment unless you want to save on washing up. You can make the funfetti cookie mix from scratch if you prefer, but I love the ease of this!
- Plain Croissants
- 1 Box of Funfetti Cake Mix
- Large Eggs
- Unflavored Oil (such as canola/sunflower/vegetable)
- Optional: Powdered Sugar (Icing Sugar)
- Optional: Sprinkles – if you like extra!
USING UP STALE CROISSANTS
There are SO many ways to use up stale croissants, but this is by far my favorite. You can also find a bread and butter pudding using old croissants in my cookbook โPart-Time Bakerโ. Using up stale croissants doesnโt have to be a challenge. In fact, with a little creativity, you can turn those slightly past-their-prime pastries into something delicious. Here are several ways to breathe new life into your stale croissants:
- French Toast: Transform your croissants into a luxurious breakfast by slicing them in half and soaking them in a mixture of beaten eggs, milk, sugar, vanilla extract, and a pinch of cinnamon. Cook on a buttered skillet until golden brown and serve with maple syrup.
- Bread Pudding: Cut the croissants into chunks and mix them with raisins, nuts, and a custard made from eggs, sugar, milk, and vanilla. Bake until the custard is set for a comforting dessert.
- Croutons: Dice the croissants, toss them with melted butter and your favorite seasonings, and bake until crispy. Theyโll add a buttery crunch to soups and salads.
- Savory Sandwiches: Croissants are great for sandwiches. The slight staleness wonโt be an issue once they are filled with moist fillings like ham and cheese, turkey and cranberry, or chicken salad.
- Panzanella Salad: Revive your croissants by tearing them into pieces and mixing with fresh tomatoes, cucumbers, red onions, basil, olive oil, and vinegar for an Italian bread salad.
- Croissant Bread Crumbs: Process the croissants in a food processor until fine, and use the crumbs as a topping for baked casseroles, macaroni and cheese, or as a breading for fried foods.
- Croissant Pudding: Similar to bread pudding, you can soak pieces of croissants in a chocolate or lemon custard before baking for a twist on the classic dessert.
By repurposing your stale croissants in these ways, not only do you reduce food waste, but you also get to enjoy a variety of delicious new treats.
TOP TIPS FOR THE BEST Funfetti Cookie Croissants (Box Mix)
- Plain Croissants: You can buy these new from the store, or use up some one or two day old stale ones. As they go in for another bake, either option is fine! Use whichever shape or size suits you.ย
- Funfetti Cake Mix: Using my Cake Mix Cookie recipe and turning them into the cookie dough here really helps to cut down on time!
- Powdered Sugar: Dust the powdered sugar over the top at the end for a really Instagrammable effect.
- Bake Time: These croissants need about 15 minutes of bake time. We want the croissant to get warm and crispy again without burning the chocolate drizzle.ย
- Variations: Feel free to change these up with different sprinkles, chocolate chips, or whatever else you have that you love to put in cookies!

Storage for Funfetti Cookie Croissants (Box Mix)
After baking, place the croissants on a wire rack to prevent any soggy bases. Definitely best eaten warm, but if you have any leftover, store in an airtight container in a cool/dry place for 2 days. To heat them up again, place them in a hot oven for 5-10 minutes, but they are still great eaten cool!
For my Funfetti Cookie Croissants (Box Mix), I use a basic cookie or sheet pan. Use baking parchment if you want to save on washing up. Funfetti Cookie Croissants (using Box Cake Mix)
Ingredients
- 6 (6) Large Croissants Store Bought
- 15.25 oz (425 g) Box Funfetti Cake Mix (1 Standard Box)
- 2 (2) Large Eggs
- ยฝ Cup (120 ml) Vegetable Oil or similar unflavored oil
- Sprinkles Optional
- Powdered Sugar Optional
Instructions
- Pre-heat the oven to 350โ/175โ. Line a large baking tray.
- Slice the croissants open lengthways, to create a space to fill!
- Mix the funfetti cake mix, oil and eggs until combined – a whisk then a spatula for when it gets stiff work well, but an electric mixer will work too. If you want to add more sprinkles, do it here! I add about 1/4 cup just to really make them pop.
- Scoop 1-2 tablespoons of the cookie dough into each open croissant. Spread in an even layer – it will spill out the sides a little, so don't go all the way to the edges! Close the croissants, spread about 1 tbsp on top of each croissant.
- Bake 15 minutes, until the cookie dough is turning gold at the edges. Remove and let cool on a wire rack. Dust with powdered sugar if using, and serve!
