Ingredients

For the Brownie Layer

  • 100 g (ยฝ cup) Semi Sweet (Dark) Chocolate Melted
  • 170 g (12 tbsp) Unsalted Butter Melted
  • 100 g (ยฝ cup) Granulated Sugar
  • 100 g (ยฝ cup) Light Brown Sugar
  • 2 (2) Large Eggs
  • 85 g (โ…” cup) All Purpose Flour Flour
  • 30 g (6 tbsp) Cocoa Powder

For the Cheesecake Layer

  • 200 g (1 cup) Full Fat Cream Cheese
  • 1 (1) Large Egg
  • 1 tsp (1 tsp) Vanilla Extract
  • 50 g (ยผ cup) Granulated Sugar

For the Cookie Dough

  • 70 g (5 tbsp) Unsalted Butter Softened
  • 60 g (โ…“ cup) Light Brown Sugar
  • 20 g (2 tbsp) Granulated Sugar
  • 1 (1) Medium Egg
  • 1 tsp (1 tsp) Vanilla Extract
  • 150 g (1 ยผ cups) All Purpose Flour
  • 200 g (1 cup) Funfetti Sprinkles

Instructions

  • Preheat the oven to 370โ„‰/180โ„ƒ. Line an 8 inch square baking pan.

For the Brownie

  • Melt the dark/semi-sweet chocolate by breaking up into small pieces in a bowl and heating for 30 second intervals in a microwave, stirring in between. Set aside to cool whilst making the brownies. Alternatively, set up a double boiler. Do this by placing a heatproof bowl over a small pot of simmering water. Add the chocolate to the heatproof bowl and stir until melted.ย 
  • In a large bowl/the bowl of a stand mixer, combine the melted butter and both sugars. Add the egg and mix again. Slowly incorporate the melted chocolate until everything is fully combined.
  • Fold in the flour and cocoa powder. Pour this into the lined pan.

For the Cheesecake

  • Make the cheesecake layer by combining the cream cheese, sugar, egg and vanilla in a small bowl. Pour this over the brownie layer.

For the Cookie Dough

  • Make the cookie layer: cream the butter and both sugars on high speed for 3-5 minutes, until light and fluffy.
  • Add the egg and vanilla and beat again. Fold in the flour and sprinkles. Use a spoon to 'dollop' the cookie dough on top of the cheesecake layer. Swirl using a knife and top with more sprinkles.
  • Bake for approx 35-38 minutes, until the cheesecake/cooking topping is looking golden and it is only a little wobbly in the middle. Let cool completely before slicing.
