If you love rich chocolate desserts, these Brigadeiro Brownies are about to become a new favorite. They combine my classic brownie base with a Brigadeiro topping – which is made with condensed milk.
Brigadeiro is a classic Brazilian sweet made with sweetened condensed milk, cocoa powder, and butter. It is traditionally rolled into small chocolate truffles, but it also makes an incredible topping for brownies. The result is a delicious combination of textures, with a soft brownie base and a smooth, chewy chocolate topping.
These brownies are perfect for chocolate lovers, celebrations, bake sales, or whenever you want to make a simple bake feel a little more special.

🍫 Why You’ll Love These Brigadeiro Brownies
There is so much to love about this dessert, especially if you enjoy rich chocolate flavor.
- Fudgy and chocolatey: The brownie base is rich, soft, and full of chocolate flavor.
- A unique topping: Brigadeiro adds a smooth, chewy layer that is different from traditional frosting.
- Beginner-friendly: You do not need complicated decorating skills to make these brownies look impressive.
- Perfect for sharing: They can be cut into small squares, making them ideal for parties and gatherings.
- Easy to customize: Add sprinkles, chocolate shavings, or chopped nuts to make them your own.
The brigadeiro topping is what makes these brownies stand out. It is sweet, creamy, and slightly chewy, creating a texture that works beautifully with a dense brownie base.
🇧🇷 What Is Brigadeiro?
Brigadeiro is one of Brazil’s most popular sweets. It is traditionally made by cooking sweetened condensed milk with cocoa powder and butter until the mixture thickens. Once cooled, it is often rolled into balls and covered with chocolate sprinkles.
The texture is similar to a soft chocolate caramel or a very thick chocolate fudge. It is rich without needing many ingredients, which makes it both delicious and easy to prepare.
For these brownies, the brigadeiro is used as a topping rather than being rolled into individual sweets. This makes the dessert quicker to assemble while still giving you the classic flavor of Brazilian brigadeiro.
If you have never tried brigadeiro before, this is a great introduction. The familiar brownie base makes the dessert approachable, while the topping adds something new and exciting.
✨ The Best Brownie Base
A fudgy brownie works best for this recipe because it provides a rich, dense base for the brigadeiro topping. A cakey brownie can also work, but the contrast will be slightly different.
For the best texture, avoid overbaking the brownies. They should be set around the edges but still slightly soft in the center. The brownies will continue to firm up as they cool, so taking them out of the oven at the right time is important.
A brownie that is too dry may compete with the soft brigadeiro topping. A fudgy brownie, on the other hand, creates a rich base that almost melts in your mouth.
Allow the brownies to cool completely before adding the topping. If the brownie base is still warm, the brigadeiro may soften too much and become difficult to spread.
🍯 Making the Brigadeiro Topping
The brigadeiro topping is made by gently cooking sweetened condensed milk, cocoa powder, and butter until the mixture thickens. This is a simple process, but it does require a little patience.
The mixture should be stirred frequently so it does not catch on the bottom of the pan. As it cooks, it will become thicker and more cohesive. You are looking for a consistency that is spreadable but not runny.
One of the most important tips is to avoid cooking the brigadeiro too quickly. Medium or medium-low heat gives the ingredients time to combine smoothly and helps prevent scorching.
The topping will continue to thicken as it cools, so it may seem slightly softer when it first comes off the heat. Let it cool for a few minutes before spreading it over the brownies.
For an extra smooth topping, make sure the cocoa powder is fully incorporated. Any lumps will become more noticeable once the brigadeiro is spread across the brownies.

🎂 Decorating Your Brownies
Brigadeiro brownies look beautiful with a simple finish. Once the topping has been spread over the cooled brownies, you can leave it smooth or add a few decorations.
Chocolate sprinkles are the traditional choice and give the brownies a classic brigadeiro appearance. You could also use:
- Chocolate curls
- Mini chocolate chips
- Cocoa powder
- Chopped toasted nuts
- Flaky sea salt
- White chocolate drizzle
- Colorful sprinkles for birthdays
For clean slices, allow the brownies to chill before cutting them. Use a sharp knife and wipe it clean between cuts. This will help you create neat squares with visible layers.
If you prefer smaller portions, cut the brownies into bite-sized pieces. The rich chocolate flavor and sweet topping make small squares especially satisfying.
👩🍳 Beginner Tips for Perfect Brigadeiro Brownies
A few simple tips can make a big difference.
Use good-quality cocoa powder. Since both the brownie base and topping are chocolate-focused, the flavor of the cocoa will come through clearly.
Do not overbake the brownies. A slightly fudgy center creates the best contrast with the brigadeiro.
Cool the brownies fully. Adding the topping while the brownies are warm can cause it to melt or slide.
Stir the brigadeiro often. This helps prevent sticking and keeps the mixture smooth.
Let the topping cool slightly. It should be thick enough to spread without running over the edges.
Chill before slicing. This makes the layers easier to cut and helps the brigadeiro hold its shape.
⚠️ Common Mistakes to Avoid
One common mistake is cooking the brigadeiro for too long. If it becomes very stiff, it may be difficult to spread over the brownies. If this happens, allow it to cool slightly and gently work it with a spatula. A small amount of warmth can also help soften it.
Another mistake is spreading the topping over brownies that are still warm. The heat from the brownie can loosen the brigadeiro and make the finished dessert messy.
It is also important not to cut the brownies too soon. The topping needs time to set, and the brownie base needs time to firm up. Chilling the assembled brownies will make the final result much easier to handle.
Finally, avoid adding too many toppings. Brigadeiro is already rich and sweet, so a simple layer of chocolate sprinkles or a light dusting of cocoa powder is often all you need.
🧊 Storage Tips
Store Brigadeiro Brownies in an airtight container. They can be kept at room temperature for a short period, provided the environment is not too warm, but refrigeration is usually the best option for maintaining the topping’s texture.
When refrigerated, the brigadeiro becomes firmer and slightly chewier. Let the brownies sit at room temperature for a few minutes before serving so the topping softens slightly.
These brownies are also ideal for preparing ahead of time. Making them the day before serving allows the brownie base and topping to set fully, making them easier to slice and serve.
🎉 When to Serve Brigadeiro Brownies
These brownies are perfect for birthdays, holiday dessert tables, potlucks, bake sales, and dinner parties. They are also a lovely choice when you want to introduce friends and family to a traditional Brazilian sweet.
Because they are rich, they pair well with coffee, espresso, or a glass of cold milk. For an extra indulgent dessert, serve them slightly warmed with a scoop of vanilla ice cream.
They also make a thoughtful homemade gift. Cut them into neat squares, place them in a small box, and finish with a little chocolate sprinkle decoration for a bakery-style presentation.

Final Thoughts
Brigadeiro Brownies are a delicious way to combine two irresistible chocolate desserts. The fudgy brownie base is rich and comforting, while the Brazilian brigadeiro topping adds a smooth, chewy texture and plenty of chocolate flavor.
They are simple enough for beginner bakers but special enough for celebrations. Whether you are already a fan of brigadeiro or trying it for the first time, these brownies are an easy and delicious place to start.
For these Brigadeiro Brownies, I use a basic 8′ square pan (I like this one). I also recommend a good stand mixer or high speed mixer (like this one) to make the brownie mixture. - 2 (2) Large Eggs
- 2 tsp (2 tsp) Vanilla Extract
- 80 g (⅔ cups) All Purpose Flour
- 30 g (6 tbsp) Cocoa Powder
For the Brigadeiro Layer
- 397 g (14 oz) Sweetened Condensed Milk (1 can)
- 1 tbsp (1 tbsp) Unsalted Butter
- 3 tbsp (3 tbsp) Cocoa Powder
- Chocolate Sprinkles
Instructions
- Preheat oven to 370℉/180℃. Line a 8″ square baking tin with greaseproof paper.
- Melt the dark/semi-sweet chocolate by breaking up into small pieces in a bowl and heating for 30 second intervals in a microwave, stirring in between. Set aside to cool whilst making the brownies. Alternatively, set up a double boiler. Do this by placing a heatproof bowl over a small pot of simmering water. Add the chocolate to the heatproof bowl and stir until melted.
- In a large bowl or the bowl of a stand mixer combine the melted butter, and both the brown and granulated sugars on a medium speed until totally combined.
- Add the eggs and vanilla and mix again. Then check that the chocolate has cooled a little before adding in and combining.
- Add in the flour and cocoa powder and fold together. Pour the batter into the prepared pan. Bake 25-28 minutes. Let cool.
For the Brigadeiro Layer
- Once the brownie has cooled, make the Brigadeiro layer.
- Add condensed milk, butter and cocoa powder to a saucepan over a low/medium heat. Stir continuously for about 10 minutes, until thickened. Pour this over the brownie.
- Top with a generous amount of chocolate sprinkles and let set 1 hour before slicing. (Speed this up by refrigerating 30 minutes, or overnight).
