What Are Peanut Butter & Jelly Cheesecake Brownies? 🍰

Peanut Butter & Jelly Cheesecake Brownies combine three delicious layers of flavor in one dessert.

The base is a classic chocolate brownie, rich and fudgy with a deep cocoa flavor. On top is a smooth peanut butter cheesecake mixture made with cream cheese and peanut butter. Raspberry preserves are then swirled through the cheesecake layer, creating beautiful ribbons of fruit and adding a little tartness to balance the richness of the chocolate and peanut butter.

Once baked and chilled, the brownies have a soft chocolate base, creamy peanut butter cheesecake, and sweet raspberry swirls in every bite.

They’re a fun twist on traditional cheesecake brownies and a delicious way to enjoy the nostalgic flavors of a peanut butter and jelly sandwich.

Why Peanut Butter, Raspberry, and Chocolate Work So Well 🥜🍓

Peanut butter and jelly are a classic pairing for a reason. The rich, salty flavor of peanut butter balances the sweetness and tartness of fruit preserves beautifully.

Adding chocolate to the combination takes things to another level.

Chocolate brings a deeper, more indulgent flavor that works especially well with peanut butter. The raspberry preserves help cut through the richness, adding brightness and a little acidity to the dessert.

The result is a brownie that feels decadent but still has a lovely balance of flavors.

  • Semi Sweet Chocolate (Melted)

Peanut Butter & Jelly Cheesecake Brownies

The Best Type of Peanut Butter to Use 🥜

For the smoothest cheesecake layer, creamy conventional peanut butter is usually the easiest choice.

Natural peanut butter can work, but it often separates and may create a looser or less consistent cheesecake mixture. If you prefer to use natural peanut butter, make sure it’s thoroughly stirred before adding it to the batter.

Creamy peanut butter gives the cheesecake layer a smooth texture and helps the peanut butter flavor shine without overpowering the raspberry preserves.

Why Raspberry Preserves Are Perfect for This Recipe 🍓

Raspberry preserves add sweetness, tartness, and a beautiful pop of color to these brownies.

Raspberries are especially delicious with chocolate because their natural acidity balances the richness of cocoa. The preserves also create a lovely contrast against the pale peanut butter cheesecake layer.

Seedless raspberry preserves are a great option if you prefer a smoother swirl, while traditional raspberry jam works just as well if you enjoy a little texture from the seeds.

You can use either, depending on your preference.

Tips for Perfect Cheesecake Brownies 👩‍🍳✨

Even beginner bakers can achieve beautiful results with a few simple tips.

Use room temperature cream cheese

Softened cream cheese mixes more smoothly and helps prevent lumps in the cheesecake layer.

Avoid overmixing

Once the ingredients are combined, stop mixing. Overmixing can introduce too much air into the cheesecake batter and may cause it to crack during baking.

Use a light hand when swirling

The goal is to create distinct ribbons of raspberry throughout the peanut butter cheesecake, not blend everything together.

A few gentle swirls with a knife or skewer are enough.

Let the brownies cool completely

This is one of the most important steps. The cheesecake layer continues to set as the brownies cool, so cutting into them too soon can result in messy slices.

Chill before slicing

Refrigerating the brownies makes the cheesecake layer firmer and helps create clean, bakery style slices.

Decorating Ideas 🎉

These brownies are beautiful on their own, but there are plenty of easy ways to make them extra special.

Try adding:

  • A drizzle of melted peanut butter
  • A sprinkle of chopped roasted peanuts
  • Fresh raspberries
  • Chocolate curls
  • A light dusting of powdered sugar
  • A few flakes of sea salt

For a more dramatic finish, add a little extra raspberry swirl just before serving.

Troubleshooting and Common Mistakes 🚨

Layered brownies can sometimes be tricky, especially if you’re new to cheesecake desserts. Here are some common problems and how to avoid them.

My brownies are dry

This is usually caused by overbaking. Brownies should still have a few moist crumbs on a toothpick when they’re removed from the oven.

My cheesecake layer is lumpy

Cold cream cheese is usually the culprit. Let it soften before mixing, and beat it until smooth before adding the other ingredients.

My cheesecake layer cracked

Cracks can happen when the cheesecake is overbaked or the batter is overmixed. Mix just until smooth and avoid baking longer than necessary.

My raspberry swirl disappeared

If you swirl too much, the preserves can blend into the cheesecake mixture instead of creating distinct ribbons. A few gentle passes are all you need.

My cheesecake layer is too soft

The brownies may need more chilling time. Allow them to cool completely, then refrigerate until the cheesecake layer is firm.

My brownies are difficult to slice

Use a sharp knife and wipe it clean between cuts. Chilling the brownies thoroughly will also make slicing much easier.

My peanut butter flavor is too weak

Make sure you’re using enough peanut butter and choose a brand with a rich, roasted flavor. Creamy peanut butter works best for a smooth cheesecake layer.

Storage Tips ❄️

These brownies are ideal for making ahead because the cheesecake layer benefits from chilling.

  • Store in an airtight container in the refrigerator for up to 5 days.
  • Bring them to room temperature for 15 to 20 minutes before serving if you prefer a softer texture.
  • Freeze individual slices for up to 2 months.
  • Thaw overnight in the refrigerator for the best results.

If you’re preparing these for a party, making them the day before is a great option.

Perfect Occasions for Peanut Butter & Jelly Brownies 🎈

These brownies are perfect for almost any occasion.

They’re especially lovely for:

  • Birthday parties
  • Bake sales
  • School events
  • Afternoon tea
  • Potluck dinners
  • Family movie nights
  • Holiday dessert tables
  • Homemade gifts

The combination of familiar flavors and an impressive appearance makes them a crowd pleaser for both kids and adults.

Delicious Variations 🍫

Once you’ve tried the classic raspberry version, there are plenty of ways to change things up.

Try swapping the raspberry preserves for:

  • Strawberry jam
  • Blackberry preserves
  • Blueberry jam
  • Cherry preserves
  • Mixed berry jam

You can also add chopped peanuts to the brownie batter or sprinkle them over the cheesecake layer for extra crunch.

For an even richer chocolate flavor, use dark chocolate cocoa powder in the brownie base.

Why This Recipe Works 💡

Every element of these brownies has a purpose.

The fudgy brownie base provides a rich chocolate foundation. The peanut butter cheesecake layer adds creaminess and a salty-sweet flavor that balances the chocolate. Raspberry preserves introduce brightness, sweetness, and tartness, helping the dessert feel balanced rather than overly rich.

The swirled appearance also makes these brownies look beautiful with very little extra effort.

It’s a simple combination of classic flavors that creates a dessert that’s both nostalgic and a little more sophisticated.

Ingredients

  • 100 g (½ cups) Dark/Semi-Sweet Chocolate Melted
  • 170 g (¾ cups) Unsalted Butter Melted
  • 100 g (½ cups) Light Brown Sugar
  • 100 g (½ cups) Granulated Sugar
  • 2 (2) Large Eggs
  • 2 tsp (2 tsp) Vanilla Extract
  • 80 g ( cups) All Purpose Flour
  • 30 g (6 tbsp) Cocoa Powder

For the Cheesecake Layer

  • 225 g (1 cup) Full Fat Cream Cheese
  • 50 g (¼ cups) Granulated Sugar
  • 1 (1) Large Egg
  • 2 tbsp (2 tbsp) Creamy Peanut Butter
  • 2 tbsp (2 tbsp) Milk

Additional

  • 2 tbsp (2 tbsp) Raspberry Jam/Jelly/Preserve
  • Frozen Raspberries Optional, to decorate

Instructions

  • Preheat oven to 370℉/180℃. Line a 8″ square baking tin with greaseproof paper.
  • Melt the dark/semi-sweet chocolate by breaking up into small pieces in a bowl and heating for 30 second intervals in a microwave, stirring in between. Set aside to cool whilst making the brownies. Alternatively, set up a double boiler. Do this by placing a heatproof bowl over a small pot of simmering water. Add the chocolate to the heatproof bowl and stir until melted.
  • In a large bowl or the bowl of a stand mixer combine the melted butter, and both the brown and granulated sugars on a medium speed until totally combined.
  • Add the eggs and vanilla and mix again. Then check that the chocolate has cooled a little before adding in and combining.
  • Add in the flour, cocoa powder and fold together. Pour the batter into the prepared pan.

For the Cheesecake Layer

  • Make the cheesecake layer by whisking the cream cheese, sugar, egg and peanut butter. Pour this over the brownies. Dollop the raspberry jam/jelly over the cheesecake mixture and swirl in using a knife. Finish with a scatter of frozen raspberries if using (about a handful).
  • Bake for 33-36 minutes. The cheesecake may look a little wobbly but that is fine! Let cool before slicing and serving!
