These Mini Brownie Bites with Melted Chocolate Dips are a wonderfully fun bake! These are so easy to make – the brownie recipe keeps things simple with minimal hassle. I keep seeing TikTok’s with a ‘bring a board/platter’ theme, so this would be perfect for that too!
The brownies themselves are super simple, dense and fudgy. The batter gets packed with melted chocolate, chocolate chunks and minimal flour to keep them really fudgy. For neat slices, let come to room temperature before cutting with a hot knife.
For these brownies, we rely heavily on the melted butter and light brown sugar to give the fudgy texture and super shiny topping. To make the shiny top on a brownie, there are arguments as to whether it’s the egg, or the molten sugar in the butter, so let’s make sure to do both. They keep well in an airtight container for a few days. That said, they don’t last long if you’ve got lots of happy hungry mouths in the house!

WHEN IT COMES TO MAKING THE BEST BROWNIES, HERE ARE A FEW TIPS TO KEEP IN MIND:

- Don’t Overmix: When combining the ingredients, be gentle and avoid overmixing the batter. Overmixing can lead to a denser and tougher texture. Mix until the ingredients are just combined.
- Proper Pan Size: Use the recommended pan size mentioned in the recipe. Using a smaller or larger pan can affect the baking time and the texture of the brownies. For fudgy and moist brownies, an 8×8-inch square baking pan is usually recommended.

INGREDIENTS REQUIREDÂ for my Mini Brownie Bites with Melted Chocolate Dips
There are no specialist ingredients or equipment required for this bake. I can find everything I need at my local supermarket or grocery store. Also, I use a standard 8 inch square tin for almost all of my traybake recipes for ease. If you do want to convert to 9 inch, you’ll need to play with the quantities a little or they will be too thin. To line a square baking tin, cut two pieces of baking paper that are just narrower than the width of the tin (less than 8 inches wide). Then place one on top of the other in opposite directions, so that all four edges of the tin are covered. This will make removing the bake so much easier! Slice when the brownies have cooled, and use a hot knife for neat edges!

TIPS FOR THE BEST Mini Brownie Bites with Melted Chocolate Dips
- Brown Sugar: This is crucial to the perfect fudgy texture and deep flavour. You could use dark brown soft if you’re really in a pinch. Light brown is definitely your best friend in brownies.
- Melted Butter: This is what gives brownies that oh so Instagrammable shiny, crisp top. Don’t skip this step!
- Cocoa Powder: As this is a key component, I do recommend a decent quality cocoa powder – but don’t stress if you don’t have any!
- Chocolate Chunks: I like using chopped milk, white and dark chocolate to add texture. You could use chocolate chips if this is all you have to hand!
- Dips: Take care when warming up anything with a high sugar content. Chocolate will take some time, so heat in 20 second intervals, stirring in between. Things like Nutella and Biscoff just need about 30 seconds to loosen – but go for 10 second intervals as they have a really high sugar content!

Mini Brownie Bites with Melted Chocolate Dips
Ingredients
- 100 g (½ cups) Semi Sweet Chocolate Melted
- 170 g (12 tbsp) Unsalted Butter Melted
- 100 g (½ cups) Light Brown Soft Sugar
- 100 g (½ cups) Granulated Sugar
- 2 (2) Large Eggs
- 2 tsp (2 tsp) Vanilla Extract
- 85 g (â…” cups) All Purpose Flour
- 30 g (6 tbsp) Cocoa Powder
- 100 g (½ cups) Milk Chocolate Chopped
- 100 g (½ cups) Semi Sweet Chocolate Chopped
For the Dips (Adjust to personal preference)
- 100 g (¾ cups) White Chocolate Melted
- 5 tbsp (5 tbsp) Chocolate Hazelnut Spread
- 5 tbsp (5 tbsp) Biscoff Spread
Instructions
- Preheat the oven to 370℉/180C Fan. Line an 8" Square Pan.
- Start by melting the dark chocolate: break up the dark chocolate and melt in the microwave in 20 second intervals, stirring in between to make sure it doesn’t burn. Alternatively, set up a double boiler. Do this by placing a heatproof bowl over a small pot of simmering water. Add the chocolate to the heatproof bowl and stir until melted. Set aside.
- Combine the melted butter, granulated sugar and light brown sugar in a large bowl/bowl of a stand mixer – on a medium speed for 3-5 minutes.
- Add in the eggs and vanilla and mix again. Then add the melted chocolate and whisk to combine.
- Fold in the flour, cocoa powder, a pinch of salt and the chopped milk and semi sweet (dark) chocolate. Pour into the lined pan and bake 30 minutes. Remove and let cool on a wire rack.
- Prepare the dips by warming in the microwave. Spreads (like Biscoff, Nutella or Peanut Butter) will need about 20-40 seconds but check regularly as they are prone to burning. Melt the chocolate as before, in 20 second intervals, stirring in between!
- Slice the brownies into 6×6 squares – or as big as you like! Serve immediately with the dips!
