Peanut Butter Oreo Brownie Bites

These Peanut Butter Oreo Brownie Bites take my original viral Oreo Brownie Cups and transform them into the perfect peanut butter lovers treat! These divine bites are super simple: fudgy brownie batter goes into muffin liners, with a peanut butter Oreo placed at the bottom as a sort of base. Top with remaining brownie batter and swirl in some peanut butter. The result is the most decadent bite of gooey peanut butter goodness.

Ingredients

  • 100 g (½ cups) Dark or Semi-Sweet Chocolate Melted
  • 170 g (¾ cups) Unsalted Butter Melted
  • 100 g (½ cups) Light Brown Soft Sugar
  • 100 g (½ cups) Granulated Sugar
  • 2 (2) Large Free Range Eggs
  • 2 tsp (2 tsp) Vanilla Extract
  • 85 g ( cups) All Purpose Flour
  • 30 g (6 tbsp) Cocoa Powder
  • 12 (12 ) Peanut Butter Oreos
  • 1 tbsp (1 tbsp) Creamy Peanut Butter

Instructions

  • Pre-heat your oven to 370℉/180℃. Line a 12 hole muffin pan with muffin liners.
  • In a small bowl, break up the dark/semi-sweet chocolate and melt in the microwave in 20 second intervals, stirring in between to make sure it doesn't burn. Alternatively, set up a double boiler. Do this by placing a heatproof bowl over a small pot of simmering water. Add the chocolate to the heatproof bowl and stir until melted.
  • In a large mixing bowl, whisk together melted butter and both sugars. Add in the eggs and vanilla and mix to combine. Pour in the melted chocolate and whisk together.
  • Add the flour and cocoa powder, fold gently into the wet mixture with a rubber spatula or wooden spoon until just combined. 
  • Place 1 tablespoon of the brownie batter into each muffin liner. Add a Peanut Butter Oreo, laying flat. Top with remaining batter until cases are 3/4 full (they don't really rise).
  • Warm up the peanut butter if it's stiff (place in microwave for 20 seconds). Add a small drizzle of the peanut butter onto each brownie cup and swirl with a knife or toothpick.
  • Bake 20-23 minutes, until shiny and crisp, and barely wobbling. Remove and let cool before eating. For the perfectly Instagrammable photo, use a knife to cut in half!
