Savory Ham and Cheese Bake (Using Leftover Bread)
If you have any leftover or slightly stale bread in your kitchen, this Savory Ham and Cheese Bake is the perfect way to turn it into something mega delicious. Mine is made with hot dog buns, ham, cheese, and a simple egg custard, but the recipe is really versatile and you can change it depending on what you have in the kitchen! The result is an easy, cheesy bake that makes use of any odds and ends kicking around in your fridge!
The recipe is especially useful when you have a few leftover hot dog buns that need using. However, you can make this bake with almost any bread you have available. Sandwich bread, sourdough, brioche, dinner rolls, French bread, and even slightly stale baguette all work well.
The bread soaks up the creamy egg mixture as it bakes, creating a soft, custardy center with golden, cheesy edges. The ham adds a savory flavor, while the melted cheese makes every bite rich and satisfying.
This is a simple, flexible recipe that does not require any complicated techniques. It is also a great example of how a few everyday ingredients can be transformed into a completely new meal.

🍞 The Best Bread to Use
The beauty of this recipe is that almost any bread can work. Leftover hot dog buns are particularly useful because they are soft, easy to tear or cut, and absorb the egg mixture well.
Slightly stale bread is often even better than very fresh bread. It has a little less moisture, which means it can soak up more of the custard without becoming completely mushy.
Good options include:
- Leftover hot dog buns
- Hamburger buns
- Sandwich bread
- Sourdough
- French bread
- Baguette
- Dinner rolls
- Brioche
- Italian bread
If your bread is very fresh and soft, you can leave it out for a short time before assembling the bake. You can also lightly toast it first, although this is not essential.
Try to cut or tear the bread into similar-sized pieces so the egg mixture can distribute evenly. Small pieces create a softer, more cohesive bake, while larger pieces give the finished dish a little more texture.
🥚 Understanding the Egg Custard
The egg mixture is what brings this dish together. It soaks into the bread and sets in the oven, creating a texture similar to a savory bread pudding or breakfast strata.
The custard is usually made with eggs, milk, and seasonings. A little salt and pepper are essential, but you can also add garlic powder, onion powder, dried herbs, mustard, or paprika for extra flavor.
Whisk the eggs and milk together thoroughly before pouring the mixture over the bread. You want the eggs to be fully combined so the bake cooks evenly.
It is also important to give the bread time to absorb the custard. If you pour the mixture over the bread and bake immediately, the center may be less soft and flavorful. Allowing the dish to rest for a few minutes helps the custard reach more of the bread.
For an even richer bake, you can replace some of the milk with half-and-half or add a small amount of cream. However, regular milk works perfectly well for an easy everyday version.
🥓 Choosing the Ham
Cooked ham is a convenient choice because it adds plenty of flavor without needing additional preparation. Deli ham, leftover baked ham, smoked ham, or diced ham steaks can all work.
If using deli ham, cut it into small pieces or strips so it distributes evenly throughout the bake. Larger pieces can make some bites overly salty or heavy.
Leftover holiday ham is especially good in this recipe. It is an easy way to repurpose extra ham into a completely different meal.
You can also substitute cooked bacon, sausage, turkey, or shredded chicken if you do not have ham. The important thing is to use meat that is already cooked before adding it to the dish.
🧀 The Best Cheese for This Bake
Swiss cheese is a natural pairing with ham, offering a slightly nutty flavor that works beautifully with the creamy egg mixture. However, you can use other cheeses depending on what you have available.
Good choices include:
- Swiss cheese
- Cheddar
- Gruyère
- Monterey Jack
- Mozzarella
- Colby Jack
- Gouda
- Provolone
You can use one cheese or combine two varieties. For example, Swiss and cheddar create a flavorful combination, while mozzarella adds extra stretchiness.
For the best results, grate the cheese yourself if possible. Freshly grated cheese melts more evenly and creates a smoother finish. Pre-shredded cheese will also work when convenience is the priority.
👩🍳 Beginner Tips for a Perfect Bake
A few simple tips will help you achieve the best texture.
Do not use too much liquid. The bread should be moistened but not completely submerged. Too much custard can leave the center watery.
Distribute the ingredients evenly. Add the bread, ham, and cheese in layers or mix them together before placing them in the baking dish. This helps every portion contain a little of each ingredient.
Let the bread absorb the custard. A short resting period allows the egg mixture to soak into the bread before baking.
Avoid overbaking. The bake should be set in the center but still soft and tender. Overbaking can make the eggs rubbery and the bread dry.
Use a suitable baking dish. A dish that is too deep may cause the center to take much longer to cook than the edges.
Allow it to rest before serving. Letting the bake sit for a few minutes after coming out of the oven helps it firm up and makes it easier to portion.
⚠️ Common Mistakes to Avoid
One of the most common mistakes is using bread that is too fresh without allowing it to dry slightly. Very soft bread can absorb the custard quickly and become overly dense. This is not always a problem, but slightly stale bread usually gives a better texture.
Another mistake is adding too much cheese. While a generous amount of cheese is delicious, too much can make the dish greasy and overpower the other ingredients. Aim for enough cheese to create a golden, melted topping without completely covering the bread.
It is also easy to under-season the egg mixture. Bread and eggs are mild ingredients, so salt, pepper, and a few additional seasonings help bring everything to life.
Finally, avoid cutting into the bake immediately after removing it from the oven. The center continues to set as it rests, so giving it a few minutes will produce cleaner slices and a more cohesive texture.
🌿 Easy Variations
This recipe is very easy to adapt based on what you have available.
For a vegetable version, add chopped spinach, mushrooms, bell peppers, onions, or tomatoes. Cook vegetables with a high water content first so they do not release too much moisture into the bake.
For a lighter version, use a mixture of milk and cream. You can also add a little Dijon mustard or a pinch of smoked paprika to the custard.
For a breakfast-inspired variation, add cooked breakfast sausage, crispy bacon, or green onions. A little fresh parsley or chives can also add color and freshness.
If you prefer a vegetarian bake, leave out the ham and add extra vegetables, mushrooms, or a meat-free sausage alternative.
You can also experiment with different breads and cheeses to create a new version each time you make it.
🧊 Storage and Reheating
Leftover Savory Ham and Cheese Bake should be stored in an airtight container in the refrigerator. It is best enjoyed within a few days.
To reheat, place individual portions in the microwave for a quick option, or warm them in the oven for a more even texture. If reheating in the oven, cover the dish loosely with foil so the top does not become too dark.
The bake can also be assembled ahead of time and kept refrigerated before baking. If preparing it in advance, allow the dish to sit at room temperature briefly while the oven preheats, then bake until the center is fully set.
Because the bread continues to absorb the custard as it rests, an overnight version can be especially flavorful. Just make sure the dish is covered and refrigerated until you are ready to bake it.
